How to Blanch Eggplant

1. Put the tomato in salt water and wash it several times to remove the hair on the surface, then remove the head and tail and cut it in half for later use.

2. Heat water in a pot, add a little alkaline noodles and salad oil to prevent the tomato from losing its color during the blanching process. After the water boils, pour in the tomato and blanch until it is stringy and the water is thick. Drain the water and serve on a plate.

3. Prepare a small container for making sauce, add minced garlic, fermented bean curd juice, soy sauce, sugar, aged vinegar, and sesame oil to adjust the taste
