2. Wash thoroughly with clean water and drain (if the fishy smell is too strong, it should be removed). Add salt, cooking wine, wet bean powder and dry fine bean powder and mix well.

3. Put the fish strips one by one into a pan with 60% hot oil and fry until the skin is cooked.

4. Fry until golden brown.

5. Remove the frying oil from the brush, leaving a little oil. Add the fermented black beans, minced red pepper, minced ginger and minced garlic. When they are fragrant over low heat, add water to bring out the flavor and remove the residue.

6. Start to taste the food, add salt, MSG, chicken essence, pepper, sugar and vinegar.

7. Add the fish fillets and bring to a boil, then simmer over low heat until the fish is well-seasoned and the sauce has reduced by half. Thicken with water bean starch until the sauce is thick and shiny, then add chopped green onion and stir until done.
