5. Pour oil into the pan. When it is 30% hot, add scallion and ginger shreds and stir-fry until fragrant. Add Pixian bean paste and stir-fry until red oil comes out. Then add carrots, celery and scallops. Add cooking wine, salt, chicken essence, stir-fry quickly for a few times, drizzle with sesame oil and serve.
