How to cook pig's trotters with wine

1. After cutting the pig's trotter into pieces, boil water in a pot, add ginger slices and cooking wine to blanch the pig's trotter to remove the blood, then rinse with clean water and drain;

2.1 Heat oil in a casserole, add ginger slices and mushrooms and sauté until fragrant;

3.2 Soak the dried mushrooms in clean water, wash and drain for later use;

4. Pour in the pork knuckle, add dark soy sauce and light soy sauce for coloring;

5. Pour the red rice wine until the pig's trotter is 70% full, but not too full;

6. Bring to a boil over high heat, then turn to low heat and simmer. Turn the pig's trotters constantly to prevent them from getting stuck in the pot. Cook until the trotters are soft, about an hour and a half. Then add a little salt to taste and coriander.
