How to make garlic shredded vegetables

1.1 Cut half a cucumber and half a carrot into thin strips, try to cut them as thin as possible, especially the carrots, so that the shredded carrots will look delicate and elastic, very beautiful, which directly determines the taste and appetite. Then scoop a small bowl of shredded tofu from the cold water and set aside.

2.2 Blanch the cooked tofu shreds bought from the market in boiling water to sterilize them. Remove them and cool them in cold water immediately to keep the tofu shreds crispy.

3.1 Make the key garlic chili oil: Sprinkle 20 or so black beans on 2 to 3 teaspoons of chili powder, then pile the minced garlic of half a head of garlic on the black beans for later use

4.2 Put the three shreds in a mixing bowl, top with half a head of minced garlic and 2 small chopped green onions. You can add more minced garlic as appropriate, and the chopped green onions are mainly for adding a little onion fragrance and a touch of green, so a small amount is enough.

5. Heat the salad oil, add a star anise and 20 or so Sichuan peppercorns to fry for flavor. Then pour the oil used to fry the star anise and Sichuan peppercorns onto the minced garlic in two batches while stirring. At this time, the minced garlic will evaporate due to the hot water, and the garlic aroma will fill the air. The garlic chili oil is ready, set aside.

6. Prepare the seasoning bowl: add 1.5 teaspoons of light soy sauce, 1 teaspoon of aged vinegar, appropriate amount of salt, and appropriate amount of garlic chili oil according to personal taste. If you don’t like it too spicy, you can add more oil from the chili. Stir well, and the seasoning bowl is ready, set aside.

7. Pour the sauce in the seasoning bowl onto the minced garlic and chopped green onion on top of the shredded vegetables.

8. Mix the three shredded vegetables, sauce, minced garlic, etc., and the delicious vegetarian three shredded vegetables with garlic flavor is ready. It has a strong garlic flavor and only takes a few minutes to mix for breakfast. Pair it with hot soy milk and fried dough sticks. It is appetizing and delicious.
