How to cook beef with sauerkraut

1. Add a little salt, egg white, chicken powder, cooking wine and starch to the beef, mix well and marinate for 10 minutes.

2. Soak fern root powder until soft and set aside.

3. Open the sauerkraut seasoning packet and set aside. If you don’t have a special sauerkraut seasoning packet, you can buy a sauerkraut fish seasoning packet and use the sauerkraut in it.

4. This is the amount of a small packet of wild pepper "Xiaomi La". I took most of it and all the soup.

5. Chop the remaining wild pepper and put it together with the dried chili peppers. Prepare the other seasonings: onion, ginger, garlic and peppercorns.

6. Add a small amount of oil over low heat and fry the Sichuan peppercorns until fragrant. Be sure to use low heat, otherwise the Sichuan peppercorns will easily become burnt.

7. Fry the Sichuan peppercorns until fragrant, then add the dried chilies and fry them slightly. Then add the onions, ginger, and garlic and stir-fry over medium heat until fragrant. Then add the sauerkraut and stir-fry until cooked through.

8. Add wild pepper (along with the soup), water, some salt and chicken essence for seasoning. If you use a sauerkraut seasoning packet like I did, basically no seasoning is needed. Cook for 5 minutes to bring out the flavor of the sauerkraut.

9. While the soup base is cooking, cook the fern root powder until soft and spread it on the bottom of the bowl for later use.

10. When the soup base is cooked, add the beef slices and cook until done; separately, stir-fry some dried chilies and wild peppercorns, spread them on the finished product, sprinkle with some chopped green onions, or pour some hot oil on top, which will make it more fragrant!
