How to make peanut Yuanxiao

1. Make glutinous rice dough: 1. Put glutinous rice flour in a bowl, add water and knead the dough.

3.22. The dough should be kneaded to the point where it can be formed into a ball with a little force. If it is too soft, the Yuanxiao cannot keep its shape. If it is too hard, it will be difficult to knead into a ball and the taste will be affected.

After the peanuts are fried, rub off the peanut skins, crush them with a rolling pin, and add a little brown sugar (note: white sugar cannot be used as the filling for Yuanxiao, otherwise there will be a hard shell between the filling and the glutinous rice after cooking, which greatly affects the taste). Too much sugar will make the food greasy and cover up the aroma of the peanuts; sprinkle a little water to moisten the brown sugar.

5. Make Yuanxiao (Chinese Yuanxiao): Divide the kneaded glutinous rice dough into appropriate sizes, knead it slightly into a roughly round shape, then use your thumb to press a deep hole in the middle of the small dough, then put the prepared peanut and brown sugar filling in, seal the mouth of the hole, and knead it into a regular circle.

6. Cook Yuanxiao: Add water to a soup pot, bring to a boil, then put in Yuanxiao to cook; after boiling, add appropriate amount of cold water and continue to cook, repeat 3 times; when all the Yuanxiao float up, they are cooked, put them in a bowl, take a bite and you can immediately smell the aroma of peanuts and just the right sweetness, accompanied by the aroma of glutinous rice, sweet but not greasy, the warm and comfortable feeling is really wonderful. Note: When cooking Yuanxiao, use the back of a spoon to push the Yuanxiao in the pot to prevent them from sinking to the bottom. Do not use the method of scooping soup, otherwise the Yuanxiao will be broken.
