How to make Cantonese style purple sweet potato mooncakes

3. Pour the invert sugar syrup, soap water and cooking oil into a large bowl and mix.

4. Sift in low-gluten flour.

5. Mix into a uniform dough, wrap in plastic wrap and let it rest for an hour.

6. Peel the purple sweet potato, wash it and slice it.

7. Put it in the steamer and steam it.

8. Press into fine mashed potatoes.

9. Put it in a non-stick pan and add appropriate amount of butter.

10. Stir-fry away excess water and add appropriate amount of sugar and starch.

11. After the purple sweet potato filling is fried, divide it into small balls of 27g.

12. Divide the dough into small balls of 18g each.

13. Place the small balls on plastic wrap and press them into round pieces (large enough to cover the red bean paste filling), then top them with purple sweet potato filling.

14. Gently close the edge (the dough has very good extensibility, just push it slowly) and then knead it into a ball with the palm of your hand.

15. Coat the outer skin with a little low flour (to prevent it from sticking to the mold).

16.Put the small balls into the mold.

17. Place the cake upside down on a baking tray lined with greaseproof paper, press gently (not too hard), and then remove from the mold.

18. Arrange the prepared mooncake dough neatly on the baking tray.

19. Preheat the oven to 200 degrees, middle layer, for 20 minutes. After baking for 5 minutes, take out and brush with egg wash.

20. Continue baking for another 15 minutes, then remove and let cool. (After leaving it for a day and letting the oil recover, it will be even more beautiful)
