1. Wash the young ginger.

2. Cut the washed ginger into slices.

3. Pick the onions, wash them and cut them into sections.

4. Chop the pickled pepper and garlic and set aside.

5. Take half of the duckling and chop it into small pieces.

6. Boil water in a pot, blanch the duck meat, remove the blood, and place it on a plate.

7. Pour rapeseed oil into a hot pan. When the oil is hot, add Sichuan peppercorns, pickled peppers, garlic, Pixian bean paste, pepper powder, and a little sugar and stir-fry until the oil turns red.

8. Pour in the blanched duck meat.

9. Add cooking wine and stir-fry evenly until fragrant.

10. Add water to cover the duck meat and bring to a boil over high heat.

11. After about 15 minutes, when the water is almost dry, add the young ginger.

12. Stir-fry the young ginger and duck meat evenly.

13. When the water is dry, add the scallion segments when the young ginger and duck meat are well-seasoned.

14. Stir-fry evenly and add chicken essence.

15. Finally, serve.
