How to make vanilla caramel pudding

1. Chop the vanilla seeds and pods into small pieces with a knife, add them to the milk pot with sugar, heat over low heat until it boils slightly, then remove from heat, cover with a lid and simmer for 5-8 minutes.

2.1 Use a sieve to filter out impurities from the pudding liquid to make it taste smoother.

3.2 Pour the milk into the egg liquid and mix well.

4.1 Put sugar and cold water into a pot, simmer over medium-high heat until the edges turn yellow, then turn to low heat to ensure even heating. (No stirring is required during heating)

5.2 Grease the pudding mold with butter and set aside.

6.1 Pour the caramel liquid evenly into the mold and set aside.

7.2 When the sugar water turns amber, turn off the heat immediately and pour in hot water, stirring thoroughly.

8. Pour the pudding liquid into the mold containing caramel liquid.

9. Place the pudding mold in a baking tray, pour in hot water about 2/3 of the height of the pudding mold, preheat the oven to 160 degrees, middle layer, and bake for 40 minutes until the pudding is solidified.

10. Remove from the oven and place at room temperature to cool down. After cooling, put it in the refrigerator for more than 2 hours.

11. Use a knife to gently cut a circle along the wall of the cup, then turn it upside down to remove it from the mold.
