How to make dumplings

Long ago, dumplings were only made during festivals or when relatives came home, because meat was hard to come by and dumplings would taste better only if they contained meat. Now there are no such restrictions. Meat has become a very common food and it is no problem to have dumplings for every meal. But because they are busy at work, many people neglect cooking and gradually lose experience. The following introduces some methods of making dumplings, which those who are not skilled can learn.

1. Knead the dough: add a cup of warm water, some salt to the water, and an egg to the flour. Pour water into the basin slowly and stir constantly with chopsticks. When you feel there is no dry flour and the dough has become lumps, you can start kneading the dough. Knead the dough hard until the surface is very smooth. At this time, the best state is when the dough, basin and hands are shiny. 2. Mix the stuffing: If four people are eating, about one pound of meat stuffing will be enough. Add salt, MSG, minced ginger, soy sauce, cooking wine, sesame oil, water (broth is best) to the filling, and you can also add some pepper or something. Stir clockwise until everything is combined.

3. Chop vegetables: Choose your favorite vegetables, usually cabbage and some leeks. Cut the chives into small pieces and chop the cabbage. After chopping, squeeze out the water with gauze. Then add the meat and leeks and stir. If it is bland, add some salt. The dumpling filling is ready. 4. Roll out the dough: Take out the dough that has been proofed, knead it into long strips, and cut it into small pieces with a knife. Roll it into a flat shape with your hands. When rolling with a rolling pin, make sure the middle is thick and the edges are thin. The thick middle prevents the dumpling filling from leaking out, while the thin edges make it taste better. 5. Make dumplings: Put the dumpling stuffing in the center of the wrapper. If you are not skilled, do not put too much stuffing. First pinch the center, then pinch the sides, and then squeeze the edges of the dumpling skin from the middle to both sides, so that the soup will not leak out when the dumplings are put into the pot.

6. Cook dumplings : Boil a pot of water. When the water boils, put the dumplings in and stir them in a clockwise direction to prevent them from sticking together in the water. Reduce the high heat to low, cover and cook until the dumplings float on the water.
