How to make Liuzhou stuffed tofu

1. The meat filling I used is pork belly, which has a perfect balance of fat and lean meat.

2.1 Chop the meat into puree and chop the ginger and garlic together.

3.2 Soak glutinous rice, shiitake mushrooms and black fungus in warm water in advance. Soak glutinous rice until soft.

4.12 Peel the taro and cut into small cubes.

5.21 Chop the soaked dried shiitake mushrooms and dried black fungus into small pieces. The dried shiitake mushrooms are more fragrant.

6. Wash and cut the green onions into small pieces.

7. Put the softened and drained glutinous rice into a large bowl, add the pork filling, diced taro, chopped shiitake mushrooms and black fungus, MSG, light soy sauce, vegetable oil, chopped green onions, starch, sesame oil and salt, mix well to make the filling.

8. Use your hands to make a small hole in the tofu bubble. If the tofu bubble you bought is not hollow enough, you can put your fingers inside and push it. The skin that has been peeled off is connected, do not break it, look at the picture carefully.

9. Fill the tofu cake with stuffing, stuff it tightly so that the tofu cake is round and plump. Then peel off the attached tofu skin, seal it and press it into the shape of a tofu fruit.

10. Put the stuffed tofu fruit into the pot, add water and a little salt, cover the pot and simmer on medium-low heat for about 15 minutes until the meat filling is cooked. Be careful when adding water, don't boil it dry, or it will become mushy.

11. It is usually steamed in water. I like to stew it in water. First, adding a little salt can make the tofu skin have some salty taste. Second, the skin of the tofu absorbed the water and became softer.

For some people, making Liuzhou stuffed tofu may be simple, but only if you put your heart into it, can you really do it well.
