1. Cut purple sweet potato and pumpkin into small pieces and steam them

4. Stir until it becomes cotton-like. No water is needed during the whole process of mixing pumpkin puree and glutinous rice flour.

5. Knead into a smooth dough. The dough is still warm and not sticky.

6. Wrap the kneaded pumpkin dough with plastic wrap, and then repeat the above steps to make purple potato dough with purple potato puree. Purple sweet potatoes themselves have a low water content. After wrapping the pumpkin dough, use the same method to wrap the purple sweet potato. If you don’t cook it right away after wrapping, cover it with plastic wrap to prevent the dough from drying out and cracking.

9. The wrapped glutinous rice balls. If you can’t finish it in one go, you can cover it with plastic wrap and freeze it. You don’t need to defrost it next time you eat it. Just cook it directly like the frozen dumplings you buy from the supermarket.

10. Make ginger tea: add appropriate amount of ginger slices and 3 bowls of boiling water (for 4 people). After the water boils, simmer for 5 minutes.

11. Add appropriate amount of brown sugar and continue cooking for 10 minutes. After turning off the heat, add a small amount of dried osmanthus and simmer for 5 minutes. Osmanthus has a strong smell, so it is not advisable to put too much.

12. While waiting for the ginger tea, boil water and cook the glutinous rice balls.

13. After all the dumplings are put into the pot, stir them gently with a spoon to prevent them from sticking to the bottom. Cook over high heat for three minutes

14. After three minutes, add a bowl of cold water. After the water boils again, turn to medium-low heat and continue cooking for 2 minutes, until all the dumplings float up. Pay attention to the heat. If you keep the heat high, the dumplings will definitely break.

15. Scoop up the glutinous rice balls and pour in the sweet osmanthus ginger tea.
