1. Soak the shrimps in water, clean and set aside. It was super fresh when I bought it, but there was a power outage at home when I was about to make it, so I couldn't cook it. I had to leave it there and watch it slowly become less fresh.

2. I removed the shrimp heads and drained them for later use

3. Heat the pan with cold oil, add a little more oil, add ginger and garlic after the oil is hot, stir-fry until fragrant, then add the drained shrimp and stir-fry over high heat

4. After the shrimps turn red, add onions, salt and pepper and continue to fry. Add a little water and cook for a while. After the shrimps are fully flavored, turn to high heat to reduce the sauce. Add a little sugar, MSG and chicken powder, mix well and serve.

Stir-fried shrimp may seem complicated, but if you actually try it, you’ll find it’s not difficult at all. The key is that you must master the specific steps and methods before you do it.
