First , let’s talk about how to clean fresh pig intestines——

Simply rinse the pig intestines, put them in a basin, add sweet potato starch, aged vinegar and salt, wash them repeatedly with your hands, and then rinse the pig intestines with clean water. Preparation:

Steps:

1. Pour a little oil into the wok, pour in the pork belly and stir-fry until oil comes out, then add ginger slices and scallion segments to bring out the aroma.

2. Add the small intestine and stir-fry evenly, add some cooking wine and simmer for a while, then pour in an appropriate amount of pickled snow vegetables and enough water.

3. Bring to a boil over high heat, add the pig blood, bring to a boil again, then add the pork liver slices. Turn off the heat immediately after the liver is cooked.

4. Add salt and chicken essence to season, then serve in a bowl and garnish with coriander or celery.
