8. While the duck meat is being pressed, prepare the lotus root. (If the lotus root is cut too early, the water will drain out, so this gap is just the right time to cut the lotus root.) Cut the lotus root into dice and set aside. (It is better to cut it into larger pieces. The larger the pieces, the longer they can be simmered in the soup without losing their shape.)

9. Open the pot and take a look. After the duck meat has been boiled until the soup turns white, add the lotus root and continue boiling for half an hour. The cured duck and lotus root are basically done.

10. Finally, add a little pepper and MSG for seasoning, add a little chopped green onion, and you can start eating. (Because the cured duck itself is a pickled product, there is basically no need to add salt. The salty soup of the cured duck itself is very delicious.)
