How to make carp fish balls

1.1 Onion and ginger water: Cut onions into chopped green onions, cut ginger slices into small pieces, pour in clean water, heat in the microwave for 1 minute, and let stand for later use.

2.2 Peel and debone the carp meat, wash it and soak it in clean water for 1 hour.

3.12 Take out the carp meat that has been soaked in clean water for 1 hour, drain the water, put it into a cooking cup and beat it into fine fish paste.

4.21 The quantity is a bit too much, beat it in batches and put it into a mixing bowl.

5. Add 3 spoons of salt (it depends on the fish, I forgot to weigh the fish) and an appropriate amount of white pepper.

6. Replace the electric egg beater with a dough stick, beat the fish paste in the same direction, and add the scallion and ginger water (to be filtered, without scallions and ginger) and rum in batches. After stirring evenly, add 2 tablespoons (I used a plastic spoon from Wu Gu Mo Fang, which is larger and more convenient to use) of sweet potato flour and continue to stir with the electric egg beater in the same direction.

7. The longer you stir the fish paste, the more chewy the fish balls will be. Although my hands holding the electric whisk feel like they are going to break, I still have to persevere! When it’s almost done, roll a ball with a spoon and see if it’s smooth, as shown in the picture.

8. After you can roll out smooth small balls with a spoon and stir for a while, start to boil the water.

9. After the water boils, add 3 sprigs of dried thyme to remove the fishy smell and enhance the flavor. It tastes great. Add some salt, the amount of salt depends on the amount of water.

10. Knead the fish paste with your hands so that it is not hollow. Then roll them into fish balls and put them into the pot. There is no need to use a spatula, they will float up by themselves. Try to cook as quickly as possible, otherwise it will be bad if the fish balls in the pot are not cooked equally.

11. Cook for 10 minutes until the fish balls float on the water and then you can remove them from the pan.
