5 grams of Sichuan pepper, 5 grams of cinnamon, 3 grams of cloves, 3 grams of star anise, 5 grams of white sugar, 4 grams of pepper, 50 grams of salt, 50 grams of soy sauce, 5 grams of white wine, and 3 grams of white vinegar.

practice:

1. Use charcoal fire to burn the remaining pig hair, soak in water for about 5 minutes, scrape the skin with a knife, remove the remaining hair with pliers, rub the inner and outer layers with salt, and marinate for about 15 minutes;

2. Put about 8 bowls of clean water in an iron pot, boil it until it is boiling, put the pork head in, cover it and boil it for about 3 minutes, then take it out, rinse it with clean water, and hang it in a ventilated place to dry;

4. Put the pork head into the brine, cover and cook for about half an hour, then take it out and serve;

5. The remaining brine can be used for further processing or for making other brine foods such as cuttlefish, eggs, etc.
