2.1 Ferment until it doubles in size. Regarding fermentation, different room temperatures will produce different doughs. This can only be based on your experience. Generally, it will take more than an hour in an environment of about 28 degrees. If the temperature in my house is around 10 degrees now, I will ferment it for three to four hours. If it is in the refrigerator, it is usually about 10 hours

3.2 Place in a container for fermentation. Cover with plastic wrap so the dough does not dry out

4.12 Dip your hand in some flour and poke it into the dough. There should be a small hole. It will not bounce back or will bounce back very slowly. If the dough collapses all around, it means it has over-risen. The dough cannot be used, or it can be used as a starter. The fermented dough will have a wine smell. If this kind of dough is used to make bread, the pulling force is not enough and the dough texture will be quite rough.

5.21 Divide the fermented dough into two equal pieces. Cover with plastic wrap and let it rest for 10 minutes. Why do we repeatedly emphasize the need to wake up for a while during production? This is to give the dough enough time to relax so that it will listen to you.

6. Stretch it out and roll it up. Wake up for another 10 minutes. This should also be noted, depending on the room temperature. If your room temperature is relatively high, the dough will start to ferment in 10 minutes. Then you have to put it in the refrigerator to wake up

7. Roll it up again. Roll the dough twice so it can fit into the toast box better.

8. It is best to put the dough into the toast box with both ends touching the toast box. This way it will be fully fermented. The shape of the toast will not look good.

9. Ferment until the bread mold is 90% full. Because I have a little more flour, the fermentation needs to be a little fuller.

10. Brush evenly with egg liquid. Preheat the oven to 180 degrees, top and bottom fire, bottom layer, 30 minutes
