Fried baby chicken is a local specialty that originated from the Central Plains. It uses chicken as the main ingredient and the production process makes the chicken taste fresh and tender, with a good taste. The method of frying baby chicken is also very simple.

How to make deep fried baby chicken?

Prepare ingredients: one young chicken, 4 liang of vinegar, 5 liang of water, 4 liang of maltose, salt, spices, ginger: appropriate amount, star anise, bay leaves, pepper, cinnamon: appropriate amount.

1. Prepare a young chicken, remove the fat and internal organs from its stomach, and wash away the blood.

2. Heat the pan, add salt, star anise, bay leaves, peppercorns and cinnamon and stir-fry until fragrant.

3. Let the fried salt cool down slightly, then rub it all over the chicken inside and out. Add some ginger to remove the fishy smell, then marinate for about eight hours.

4. Pour water, vinegar and maltose together, cook over low heat to melt the maltose until it boils, then set aside.

5. Wash the marinated chicken inside and out with clean water to remove excess salt, boil a pot of water and put the chicken in for a while, then rinse with clean water, then hang the chicken with a roasting hook, pour the prepared crispy skin water on the chicken's skin and hang it in a ventilated place to dry.

6. After the chicken skin is dried, fry it in a pan at 40% oil temperature for about ten to fifteen minutes until the chicken is cooked through.

7. After the chicken is fried, take it out and then increase the oil temperature to 60% to 70% hot. Pour oil on the chicken skin to make it crispy under the high oil temperature.

8. Then chop and serve.

Wash the chicken, remove the bones and cut into pieces; wash and chop the green onions, put them in a bowl, add ingredient A to marinate, remove them from the bowl, dip them in ingredient B, put them into hot oil and fry until golden brown, then remove them from the bowl.

2. Heat 1 tablespoon of oil in the pan, add mushrooms, bamboo shoots and green peppers and stir-fry for a few times, add ingredient C and cook until well-seasoned, then add ingredient D and cook evenly, finally add chicken pieces and stir-fry evenly, then serve.

Fried Bacon Chicken Rolls

4 strips of bacon, 6 ounces of chicken, 1 scallion, 2 slices of ginger, 1 tablespoon of soy sauce, a little sugar, 1 tablespoon of rice wine, a little black pepper

(1) Wash the chicken, cut it into strips, and marinate it with all the marinade ingredients for about 15 minutes until it is well-seasoned.

(2) Place a marinated chicken strip on a slice of bacon, roll it up, and repeat this step 4 times. Then use toothpicks to skewer 4 bacon-chicken strips.

(3) Take a Chinese pot and pour about 1/2 of the pot of oil into it. Heat it over medium heat. Place the bacon chicken strips from step 2 into the heated oil pan.
