How to make salty, tender asparagus and longli fish cakes

1. The main ingredients are a large longli fish fillet, four or five asparagus, and some diced red pepper.

2.12 Use the back of a knife to finely chop the fish into paste. It is best to put a piece of pork skin underneath. (If you have a stone mortar, you can also use it. If you don’t want to use a food processor, you don’t want to wash it because there are not many ingredients.) When chopping the fish, remove some of the white tendons of the fish meat.

3.21 After chopping, put it in a larger bowl for easier handling. Add pepper, fish sauce, an egg white, salt (add with a pinch because fish sauce is salty), a spoonful of starch (to increase stickiness, or not, just make it real at home)

4.1 When you are tired of wrestling, take a break, boil water and blanch the asparagus. As soon as the asparagus changes color, pick it up and put it in cold water immediately. You don’t need to wait for the water to boil.

5.2 First, use chopsticks to stir it in a clockwise direction until it starts to become sticky. Then, scoop it up with your hands and drop it from top to bottom. Therefore, a larger basin is recommended for easier operation.

6. Chop the asparagus into small pieces and the red pepper into small pieces and put them into the fish paste. The proportion should not be too large. Three or four pieces are enough for my 8 taels of fish (of course it contains some water). I only used a few thin filaments of red pepper, but I could add a little more

7. Continue stirring clockwise, stirring and stopping, and stop when you can't stir anymore. It's actually quite fast, only about ten minutes. It's definitely not as good as a strong man's. It's not as springy as the ones you buy, but it's very tender and juicy. You will feel like it's an unexpected gain. Of course, it shouldn't be too soft and sticky.

8. Make four slightly larger ones for the cowboys first, and divide the rest evenly so that the fish cakes are more uniform in size.

9. Dip your hands in some water, scoop up a ball of fish paste and shape it into a round shape. You can use a spoon to help shape it so that you can free up your hands to take photos.

10. Put oil in the pot and press it down slightly.

11. Fry on low heat (definitely low heat) until one side turns yellow and then turn over
