While adding water, keep kneading the flour with your hands. The smaller the unit, the better. How to understand this - use the tips of your three middle fingers to knead the dough. The less you knead each time, the more uniform the dough will be later. If you knead it well, it will come out in a floc-like state.

Third, knead the flour into flocs. Now, the flour has become flocs. The next step is to merge these small flocs into large flocs. Finally, merge all the large flocs into an initial dough. During the whole process, water needs to be added. The amount of water you add depends on your feel. It should not be too dry or too wet. If it is too dry, you can't knead it. If it is too wet, you need to add more flour to prevent it from sticking to your hands. Note for beginners: When you are a beginner, it is best to scoop less flour at the beginning, because in the subsequent process of adding water, it is likely that you will need to add more flour because it is too wet.
