Ingredients: minced meat, flour, eggplant

Method 1. Mix onion, ginger, garlic, salt, MSG, cooking wine, soy sauce and minced meat.

2. Mix flour with water to make a paste and add a small amount of salt.

3. Slice the eggplant in groups of two. Do not cut through one side. Keep them stuck together, a bit like a clam shell.

4. Stuff the minced meat between the two groups of eggplant slices so that they can fit snugly between the two slices.

5. Put the clams with meat in the prepared flour paste and coat the whole body with a layer of batter.

6. Put it in a frying pan with hot oil.

7. Keep turning over and frying until both sides are golden brown. It’s out of the pot!

Nightshade (scientific name: Solanum melongena L.) is a plant of the Solanaceae family, genus Solanum. Solanum is an erect branched herb to subshrub, up to 1 meter tall, with twigs, petioles and pedicels covered with 6-8-(10)-branched, flat or short-stalked stellate hairs. The twigs are mostly purple (wild ones often have prickles), and the hairs gradually fall off as they age. The leaves are large, ovate to oblong-ovate, with petioles about 2-4.5 cm long (with prickles in the wild). The flowers are solitary and the pedicel is about 1-1.8 cm long and densely hairy. The shape and size of the fruit vary greatly. The fruit is long or round in shape, and comes in colors such as white, red, and purple.

The fruit can be eaten by vegetarians. The roots, stems and leaves are used as medicine as astringents and have diuretic effects. The leaves can also be used as anesthetics. The seeds are used as an anti-edema drug and also as a stimulant, but they can easily cause weak stomach and constipation. Eating the fruit raw can relieve food poisoning.

Eggplant contains a substance called solanine, which has antioxidant and cancer cell inhibitory effects, and is one of the sources of eggplant's health benefits; but it has a strong stimulating effect on the gastrointestinal tract and an anesthetic effect on the respiratory center, and poisoning may occur if the human body consumes high amounts.

Solanine is basically insoluble in water, so it cannot be removed by blanching, boiling, etc. Adding a little vinegar when cooking can help destroy and decompose solanine.

The best way to prevent solanine poisoning is naturally to control the intake. However, under normal circumstances, eating about 250 grams of eggplant in one meal will not cause any discomfort, so there is no need to panic too much.
