How to Make Chocolate Parfait

9.1 Pour the mixed cake batter into a 6-inch round mold and bake in a preheated oven at 166 degrees for about 25 to 30 minutes.

12. After pouring water into the pot and heating it, continue to heat it over low heat. Place the bowl containing the egg yolks into the water and heat it while stirring constantly. Keep stirring until the egg yolk mixture becomes thick, which takes about seven or eight minutes. Be sure to control the heat and be careful not to overheat the mixture so that it becomes granular. To check whether the heated egg yolk mixture is thick enough: use a spatula to pick it up. If a thick layer of it can be hung on the spatula, it means it is ready.

13. Pour the cut dark chocolate into the egg yolk mixture while it is still hot.

14. Stir until the dark chocolate is completely dissolved

15. Sift in cocoa powder and stir until smooth. Cool the egg yolk cocoa paste to room temperature

16. Use a whisk to beat the cream until the texture is clear.

17. Slice the baked cake into two slices (my slice is indeed a bit thick, but I am not good at it, so I can only slice it into two slices. People with good skills will definitely slice it into three slices and use two slices)

18. Pour 1/3 of the fresh cream into the cooled egg yolk-cocoa paste, and mix well by folding from the bottom up with a spatula. Mix well and pour all back into the whipped cream bowl

19. Mix again from the bottom up. After mixing thoroughly, the chocolate parfait paste is ready.

20. Place a piece of cake on the bottom of the cake pan

21. Then pour half of the chocolate parfait paste and smooth it out.

22. Place another cake slice on top, then pour in the remaining chocolate parfait paste and smooth it out.

23. Put it in the freezer of the refrigerator, freeze it overnight, and cut it into pieces the next day (after taking the cake and the mold out of the freezer, cover it with a hot towel and it will be easy to demould)

24. This cake can be kept in the freezer for a long time.
