How to make eight treasure fried sauce

1. Prepare the materials. Clean all and set aside. The basic ingredients are: bean paste, shrimp, peanuts, dried tofu, diced meat and diced bamboo shoots. Other ingredients can be added or reduced according to personal preference or the season.

2. Chop winter bamboo shoots, wild rice stems, carrots, eggplants, mushrooms, onions, dried tofu and pork tenderloin into small cubes, the finer the better. Slightly chop the shrimp. Larger cooked cashews or cooked peanut kernels can be slightly crushed. First, coat the diced meat and shrimp with batter (see TIPS)

3. Boil the diced wild rice stem, carrot, eggplant and tofu in broth (or water) for 5 minutes. Boil the diced winter bamboo shoots in hot water to remove the hairiness.

4. Put cooking oil in a large wok, add diced mushrooms, diced meat and shrimps and stir-fry until cooked.

5. Use a colander to scoop the cooked diced vegetables into the wok, add cashews (or peanuts) and diced mushrooms, shrimps and meat and mix well (the water in the diced vegetables does not need to be filtered too dry)

6. Add dark soy sauce for coloring, put three to four tablespoons of bean paste into the pot and stir evenly. (You can start another oil pan, stir-fry the bean paste with dark soy sauce, add it into the pan and fry until fragrant, then pour in the ingredients and stir-fry. This step depends on personal preference and the flavor of the noodle sauce.)

7. Turn on high heat and stir-fry for 5 minutes. The soup gradually reduced. Turn to medium heat and sauté for another 5 minutes. The ingredients are basically tasty. Taste it and add more soy sauce, salt or fermented black bean paste if it's too bland. (This sauce can be made saltier to go with rice)

8. When the water is basically dried up, turn on high heat, add chopped scallions and stir-fry quickly and evenly. Finally, add two small spoons of sugar to enhance the flavor and then serve. After cooling, put it in the refrigerator and eat it whenever you want. It can be kept for about a week.
