1. Cut the beef into evenly-sized strips, rinse with running water, and boil the blood and foam in a pot with warm water.

2. Pour out the water when it turns red, rinse the beef and boil it again, repeat 3-4 times until the water is clear and the meat surface turns white.

3. Drain the beef, add red curry paste and yellow curry paste with hot water to make a paste, put oil in the pot, add beef after the oil is hot and stir-fry evenly, then add sugar (add more to enhance the flavor), light soy sauce, a little dark soy sauce, and curry paste, and stir-fry evenly. Curry is quite strong, so I didn't add any other seasonings.

4. Put the fried meat into the pressure cooker and select "Meat Spare Ribs" directly. You will get delicious curry beef when it comes out of the pot.

5. Put the stewed curry beef back into the wok and stir-fry until the sauce is absorbed. After the meat is dried, place it on a baking tray lined with tin foil. I cooked a total of 5.5 pounds of meat, which can fit into a 5L electric pressure cooker. I removed the meat that was eaten after it was taken out of the pot, and placed the remaining 3 plates on the aca341 baking tray. I didn't control the temperature well this time. Uncle 10 said that it should be baked with hot air at around 90 degrees. You can try it.
