How to make sea bass baked in tomato sauce and red wine

1. Cut the cleaned sea bass in half along the middle bone, but do not cut the back off. Make three to four cuts diagonally on both sides without breaking it. Cut the red pepper, green pepper and onion into 1.5cm square pieces, cut the mushrooms and straw mushrooms into slices about 0.5cm thick, and cut half of the green onion into chopped green onions.

2. Spread one teaspoon of salt, half a teaspoon of pepper, and half a teaspoon of Sichuan pepper powder evenly on the whole fish. Pour two tablespoons of red wine evenly, add slices of ginger, garlic, and green onion and marinate for about 30 minutes.

3. Use a food processor to blend the tomatoes into a paste. Mix the mushrooms and straw mushrooms with a tablespoon of soy sauce, half a tablespoon of oyster sauce, and then add a tablespoon of blended oil.

4. Cover the baking tray with tin foil, spread the mixed straw mushrooms and shiitake mushrooms evenly on the baking tray, remove the onions, ginger and garlic from the marinade and place them on top of the straw mushrooms and shiitake mushrooms.

5. Use one tablespoon of soy sauce to rub the marinated sea bass all over, then use two tablespoons of blended oil to rub the fish all over again and place it on the prepared vegetables. Preheat the oven to 200 degrees. Place the baking tray on the bottom of the oven and bake at 200 degrees for 12-15 minutes.

6. Put a tablespoon of oil in the wok, stir-fry the onion for a few times after it is 60% hot, add the green and red peppers after it smells fragrant, add half a teaspoon of salt, stir-fry for a few times, scoop it up and put it into the baked sea bass, then put it in the oven and bake for about 5 minutes

7. Clean the pan where you fried onions, add a tablespoon of cooking oil and stir-fry the tomato sauce, then add a tablespoon of soy sauce, half a tablespoon of oyster sauce, a teaspoon of sugar, and 300ml of water and cook for about 1-2 minutes. Pour in a tablespoon of starch and drip starch to thicken, then add a teaspoon of MSG and scoop it up and pour it evenly on the baked sea bass. Sprinkle with chopped green onions and it is ready to serve.
