1. Kill the turtle and clean it. It is very difficult to operate at home, so let the chef at the market do it for you. The key is to use boiling water to remove the old skin on the surface of the turtle to remove the fishy smell.

2. Add water and 2 slices of ginger to the pot and bring to a boil. Add the soft-shell turtle and blanch it, then remove from the heat.

4. Put a small bowl of rice wine in it and set aside.

5. Put the turtle into the pan (belly facing down) and fry it on medium heat for a while.

6. Add 1 bowl of rice wine and 2 bowls of water, bring to a boil, cover and simmer on low heat for 30 minutes.

7. Add 1 spoon of dark soy sauce, 1 spoon of rock sugar and appropriate amount of salt. Continue to simmer covered for about 30 minutes.

8. Simmer until the fish meat and fish skirt are soft and glutinous, turn to high heat to reduce the sauce, scoop up the marinade and pour it on the fish pieces. Turn off the heat.
