How to make Suzhou-style smoked fish

1. Cut the fish into pieces and marinate with onion, ginger, rice wine and fine salt for 2 hours.

5. Then add the fish pieces, bring to a boil over high heat, then simmer over low heat for about 30 minutes until the soup is almost reduced. Tastes best when refrigerated.
