How to make Cantonese style fried dough

7. Heat the oil to 60% first, then lower it to 30% to 40% hot, keep the heat unchanged, put the dumplings in, and immediately gently turn them over. Keep turning them, using the bottom of the sieve to roll the dumplings back and forth like drawing circles. When appropriate, gently flatten the dumplings, then let go, and continue until the dumplings are fried to more than twice their original size.

8. Until the surface is golden and round. You can take it out
