How to make noodles

The first step is to choose flour, preferably high-gluten flour, first-grade flour, so that the noodles are chewy; the second step is to take 500 grams of flour as an example: 150 grams to 200 grams of water (note: the amount of water should be controlled according to the different moisture content of flour in different places), 5 grams of salt, 1 egg, the noodles are smooth, chewy and not muddy; the third step is to roll the noodles. It is best to roll the noodles four times with a double-roller extrusion noodle machine to make them chewy. After the noodles come out, it is best to sprinkle some starch to prevent them from sticking. The method is to use stainless steel to roll a tube similar to the size of a eight-treasure porridge bottle with a diameter as long as the roller. One end is blocked and the other end is covered with a eight-treasure porridge bottle cap to take out the open starch. Make some small holes around the tube with a diameter of one millimeter. It takes more starch to be evenly sprinkled, and then put it in the middle of the double rollers to roll the dough, or when rolling the noodles, the tube rotates with the double rollers and the starch inside will be evenly sprinkled on the noodles without sticking.

How to press noodles

Ingredients: 3 eggs (about 50g), 350g all-purpose flour, and 1 noodle machine.

1. Beat the eggs first and beat them with chopsticks.

2. Pour in flour.

3. Knead it in a basin until it forms a ball.

4. Divide it into three pieces and flatten them with your hands to make it easier to press the dough.

5. Adjust the thickness of the noodle machine first. Set it to the second gear to roll it into shape, then change to the fourth gear to roll it. You can also adjust it according to your own preferences. Roll the dough into sheets. It will be a little broken at the beginning, so roll it repeatedly several times.

6. Fold it towards the middle and wrap the crushed dough in it and continue rolling.

7. Continue pressing. If it feels sticky, sprinkle powder while rolling.

8. Roll until it is completely formed into pieces with no broken pieces in the middle. Try to roll it several times. Sprinkle some flour on the last time.

9. Now you can make the noodles. You can make them larger or smaller according to your preference.
