1.1. Put the pork elbow in boiling water and cook it, removing the floating foam while cooking, until the foam stops. Take out the cooked pork elbow and wash it with kitchen paper (the purpose of washing is to prevent too much oil from splashing when frying sugar color later)

2. Use a knife to cut an opening on the side of the elbow, cut to the bone in the middle of the elbow, cut a circle along the bone, and remove the bone. At the same time, use a knife to cut the thicker parts of the meat a few times to make it easier for seasoning, but do not cut through the skin of the elbow.

3. Put some oil in the wok, add a dozen pieces of rock sugar, and heat over low heat.

4. Heat until all the rock sugar melts and the sugar turns brown, with small bubbles appearing on the edge.

5. Seize this opportunity and immediately put the elbow skin side down into the pot. Turn it over with a spatula so that all sides of the elbow are coated with sugar color (note that oil may splash easily, so you can use the pot lid to block it). Next, pour in cooking wine, light soy sauce, dark soy sauce, onion, ginger and garlic and stir-fry.

6. Pour enough water to cover the elbow, then add salt, chicken essence, and five-spice powder to season (the soup should taste slightly saltier than normal)

7. Turn to high heat to bring the soup to a boil while adding peppercorns, star anise, cardamom, cinnamon, bay leaves, cumin, dried chilies and other stewing ingredients.

8. Stew in electric cooker for 3-4 hours

9. Before serving, pour an appropriate amount of soup into a wok, add a small amount of water starch to thicken over low heat, and pour it on the pork elbow.
