How to cook Guizhou sour soup fish

The cooking methods vary from place to place depending on the climate. For example, the climate in the south is relatively humid, so people in the south will choose to eat some chili peppers to remove moisture from the body. Therefore, people in places like Sichuan and Chongqing are particularly fond of eating chili peppers. Guizhou has a special food: Guizhou sour soup fish. The most classic taste of this sour soup fish can only be made in Guizhou. Now I will teach you how to make Guizhou sour soup fish.

Preparation of the main ingredients (it has to be made two days in advance, because the tomatoes need to be fermented to bring out the sour taste and color! So make it in advance, the earlier the better!).

Wash the fresh tomatoes you bought with warm water (about 10 to 15 degrees) more than twice! Then prepare a basin (a wooden basin works best) and a kitchen knife, and wash them both with water! There must be no oil or fat, otherwise the main ingredient of this dish will fail!

Put the washed tomatoes in a bowl and chop them with a kitchen knife until the pieces are almost like diced meat. It doesn’t matter if they are a little bigger (it’s easier to ferment if they are chopped into small pieces!), then put the chopped tomatoes in a sealable container (of course the container must be washed too! No grease). Add salt to it (adding salt is for better preservation! But it’s best not to add salt, so that it ferments faster and better! It depends on your own situation!) After completing the above steps, seal it. Just find a dark corner and leave it there for two or three days.

I believe everyone knows how to cook fish! However, the way of cutting the fish for sour soup fish is a little different! Just like the cutting method in the picture below, after the fish is killed, use a kitchen knife to cut the fish into sections, but don't separate them, keep them connected! This will allow the fish to fully absorb the flavor.

Now comes the last step. Pour out the fermented tomatoes prepared in advance according to the amount, and then seal the container. At this time, the fermented tomatoes will immediately smell sour, which proves that the tomatoes have undergone a chemical reaction. Clean the frying pan and pour boiling water into it. When the water boils, pour the fermented tomatoes (use a mesh spoon to filter to remove unwanted tomato tissues!) into the pot. Similarly, when the tomato sour soup boils, slowly put the fish into the pot from head to tail, and then put the fish head and tail together to form an O shape. Then adjust the heat to low heat and cook slowly. After ten minutes, when the fish turns white, add a little green onion, coriander and chili on it and you can slowly enjoy it. You can also add other dishes to heat together while eating to make the taste more refreshing. Now you're done.
