How to make stir-fried winter melon with mushrooms and tomatoes

1. Peel the winter melon, clean it and cut it into slices;

2. Wash the tomatoes and cut them into small pieces;

3. Soak the mushrooms in warm water, cut into small pieces and set aside;

4. Heat the pan with oil until the temperature is about 60% to 70% hot, add the mushroom slices, stir-fry for one minute, and add an appropriate amount of light soy sauce, about 15 ml;

5. Pour the winter melon slices into the pot and stir-fry with the mushroom slices for about three minutes until the winter melon slices become semi-soft;

6. Pour the tomato pieces into the pot, stir-fry the three ingredients for three minutes, add three spoons of salt and four spoons of white sugar, and continue to stir-fry for two minutes;

7. After the tomatoes have produced juice, cover the lid and simmer for a while, or continue to stir-fry; when the tomato pieces have become soft and juicy, and the winter melon slices have been stained with the red color of the tomato juice, poke them with a spatula and they feel soft, then they are ready to be served.
