1. Main Ingredients

2. The hairtail I bought had its scales scraped off, its internal organs removed and cut into sections, so you only need to wash the hairtail and marinate it with a small amount of salt and cooking wine for a while.

3. Chop ginger and garlic into small pieces, and chop green onions into sections

4. Use kitchen paper to absorb the moisture of the hairtail fish

5. Put some oil in the pot

6. When the fish is about 60% cooked, add it and fry it slowly, turning it carefully. Remove it from the pan after it changes color, leaving some oil in the pan.

7. Then add onion, ginger and garlic and fry slowly until fragrant

8. Add the fried hairtail

9. Add light soy sauce and dark soy sauce, and slowly turn the hairtail over.

10. Add a bowl of water, just enough to cover the hairtail. Bring to a boil, cover the pot and simmer over medium-low heat for about 10 minutes.

11. Wait until the juice is almost dry.
