Buckwheat noodles are a specialty of Luxi in Honghe, where everything related to buckwheat noodles is produced in abundance. My grandmother can also make various foods with buckwheat flour, such as buckwheat flour soup, buckwheat rice, buckwheat pancakes, buckwheat cakes, etc., but I only learned how to make buckwheat pancakes, which is the simplest one.

The most lovely thing about buckwheat noodles is their yellow color.

1 Preliminary processing: sieve buckwheat flour to remove coarse particles and impurities; grind brown sugar and sieve to remove impurities; grind alum into fine powder, dissolve it with 50 grams of hot water, cool and filter it for later use.

2 Prepare the dough: Put brown sugar in a bowl, add hot water to dissolve and cool, then add baking soda and maltose in turn and mix well; then add buckwheat flour and mix well, then add dissolved alum water while stirring, when it turns dark yellow, add cooked vegetable oil and mix well, finally add wheat flour (leave 200 grams for sprinkling) and stir into a greasy and slightly soft dough, cover with a wet cloth to soak the sugar in and set aside.

3 Prepare the filling: first spread the wheat flour on a steamer lined with a steamer cloth and steam it over high heat, or spread it on a baking tray and bake it in the oven. Take it out and sift it through a fine sieve to get cooked wheat flour. Then put the white sugar, orange peel sugar, cooked vegetable oil and water into a bowl and mix well. Then add the cooked wheat flour and mix well to make the filling.

1. Prepare the main ingredients first, and use better milk and eggs if you are eating them yourself.

2. You can preheat the electric baking pan first, adjust it to medium heat, and the preheating time is 5 minutes. It is almost ready to cook after preheating. Using time wisely in the kitchen is awesome

3. Beat the eggs in the main ingredients, then mix in buckwheat flour and milk, stirring constantly.

4. It will take about 5 minutes to stir evenly, which is very fast. It is enough to this extent.

5. At this time, the electric baking pan is also hot. Since it is non-stick, there is no need to add oil or anything. One spoonful per pancake is just right.

6. Wait for about 1 minute, the bottom is cooked and holes will gradually appear on the top. It will be completely cooked in about 2 minutes.

7. Then continue to make the remaining buckwheat flour one spoonful at a time, and the buckwheat flour will turn out to be a beautiful yellow color with cute little holes.
