2.2 The ribs are about half a pound. I made it for two people.

3.1 Peppercorns, star anise, cinnamon, bay leaves

4.2 Find a smaller bowl to put the ribs in, so that the seasoning and ginger can just cover the ribs, otherwise the taste will be uneven in the areas not covered. Cover with plastic wrap and marinate for 15 minutes. Note that I did not add water, the liquid is all the ingredients in the glass bowl

5. After 10 to 15 minutes, put everything in steps 3 and 4 into the pot. Note: I still didn’t add water. The liquid in the pot was all from step 2, which was completely enough! My pot is a bit big, it is 28cm. If your pot is too big, you can add a small amount of cooking wine or dark soy sauce to increase the liquid volume. I added some dark soy sauce so that the color will look better.

6. Cook over low heat for fifteen to twenty minutes. . . Sprinkle some chopped green onion before serving. Look, there is still so much liquid after cooking for so long, the pot is not dry.

7. Done! It’s ready!
