How to make mushroom stew

1. Wash the mushrooms and cut the pork belly into square pieces.

2. Heat a proper amount of oil in a pan on the fire, and stir-fry the pork belly until slightly yellow.

3. Reduce heat to low and add rock sugar, stir-fry until the meat is colored. Add scallion, ginger, star anise, bay leaves and dried chilies and sauté until fragrant.

4. Add the mushrooms and stir-fry for a while.

5. Add light soy sauce and dark soy sauce and stir-fry evenly.

6. Pour hot water over the meat and bring to a boil.

7. Move to a casserole, turn to low heat, cover with lid and simmer for 1 hour.

8. Stew until the soup is thick and the pork belly is soft and glutinous, then turn to high heat to reduce the sauce.
