How to make dry-fried beef strips

1. Wash and cut mushrooms into strips for later use

2. Cut the dried red and green peppers into strips for later use

3. Cut the celery into sections and set aside

4. Cut the onion into small pieces and set aside

5. Cut the braised beef into strips about 1cm long and set aside

6. Chop the green onion, ginger, garlic and red pepper and set aside

7. Set aside some black sesame and rock sugar

8. Wash the potatoes, rinse them with water several times to remove the starch and drain the water

9. Pour oil into the pan, put in the potatoes and fry them over medium heat (the oil should just cover the potatoes).

10. Fry the potatoes until golden brown.

11. The oil used to fry the potatoes can be put into another bowl for later use. Leave a proper amount of oil in the pot and add garlic, ginger, dried chili and rock sugar.

12. Add the chopped beef strips and stir-fry over high heat until the aroma comes out

13. Then add the green pepper, red pepper and dried tofu and stir-fry over high heat

14. Finally, add the mushrooms, celery and green onions, stir-fry together, then add the Pixian bean paste, sprinkle a little salt, and when it is almost time to serve, add the previously fried potatoes and stir-fry evenly over low heat.

15. Sprinkle black sesame seeds and a little peppercorns into the pot and serve.
