How to make lattice muffins

1. Heat the milk to about 35 degrees, add the yeast powder and stir to mix.

2. Sift the low-gluten flour into a slightly larger container.

3. Pour the beaten egg liquid into the flour.

4. Add sugar and salt and stir.

5. Add a small amount of milk with yeast into step 4, stir evenly, and then add all the milk to mix.

6. Pour the melted butter into the batter, mix well, cover with plastic wrap and place in an environment of about 35 degrees to ferment for about 30 minutes.

7. When bubbles appear on the surface of the batter, it means it has risen.

8. Heat the closed grid baking pan on a gas stove over low heat, heating both sides.

9. After it becomes hot, open the mold and use a brush to brush a layer of melted butter on the mold, being careful to brush every corner.

10. Drop a drop of water on the outer layer of the mold. If the water disappears immediately, you can pour the batter into it. I use a long-handled spoon and just one full spoonful is enough to fill the mold.

11. Close the mold and bake over low heat. Move the mold evenly so that it is heated evenly. Heat one side for about 1-2 minutes, then turn it over and heat for another 1-2 minutes. It is almost cooked when the steam gradually decreases and no longer can be seen.

12. When there is not much steam left, you can open the lid and take a look, and then bake the unevenly colored areas more carefully.
