1. Make two cuts on each side of the back of the cleaned redwood fish, apply salt, cooking wine and ginger slices evenly and marinate for ten minutes. 2. Sprinkle cornstarch on both sides of the drained fish. 3. Cut the washed tomatoes into pieces, put them into a container, and blend them into small pieces with a blender. 4. Heat the pan, add appropriate amount of oil, and fry the ginger slices with marinated fish fillets. 5. After picking up the ginger slices, put the fish in and fry it. 6. Don't rush to turn the fish over. When it's almost done frying, gently shake the pan. If the fish moves with it, it means the fish is done. Then turn it over. 7. Fry until both sides are golden brown and then remove from the pan. 8. Use the remaining oil in the pot to sauté chopped scallion and ginger. 9. After sautéing, add crushed tomatoes and appropriate amount of tomato sauce. 10. Add sugar, salt and pepper to taste. 11. Put the fried fish in it. 12. Cook together for 6-7 minutes, making sure to pour the tomato juice on the fish with a spatula, turning it over in the middle. Add appropriate amount of green beans and sweet corn kernels when serving, cook for a while and serve on a plate.

1. Make cuts on the back of the fish to make it easier to season. Marinate the fish with salt, cooking wine and ginger slices for ten minutes in advance, then drain the water. If you don’t have time, use kitchen towels to absorb water and then sprinkle with cornstarch like I did. Make sure the fish is dry when it is put into the pot to prevent oil splashing. 2. Take out the ginger slices from the marinated fish and fry them in a hot oil pan. This can also prevent the fish skin from sticking to the pan. Make sure the bottom of the pan is completely moistened with hot oil before putting the fish in. 3. When frying fish, be careful not to flip it over too quickly. Make sure to wait until the fish is fried and then turn it over. The way to check is to gently shake the pan. If the fish shakes with it, it means one side is fried. 4. It is very important to boil tomato juice. Fresh tomato juice has a bit of sour taste, so adding some tomato sauce together can neutralize its taste. After boiling for a few minutes, add salt, sugar and pepper to season. 5. Finally, add the fried redwood fish. Note that both sides should be cooked. When cooking one side, you can use a spatula to pour the juice on it continuously to help it absorb the flavor. Add green beans and corn before serving to increase the color.
