How to make spicy potatoes

1. Required materials: potatoes, onion segments, bay leaves, Sichuan pepper shreds, dark soy sauce, light soy sauce, sugar, star anise, black pepper grains, and water starch.

2. Pour oil into the pan, heat it up and add potatoes and stir-fry.

3. After stir-frying for two or three minutes, push the potatoes aside, add onions, star anise, bay leaves, and black pepper and stir-fry until fragrant. (very important)

4. Continue to stir-fry until the potato skin is slightly wrinkled.

5. Add dark soy sauce, light soy sauce and sugar and stir-fry for a while.

6. Add water until it covers the potatoes.

7. Cover the pot and simmer over low heat until the potatoes are cooked. Use chopsticks to poke the potatoes. If you can easily stick them into the potatoes, they are cooked. Remove the lid and turn to high heat to reduce the soup. Turn the potatoes over until they are colored.

8. After the potatoes are colored, quickly pour in water starch. When the sauce becomes thick, coat the potatoes with it. Marinate for more than a day for better flavor.
