<Taiwanese cuisine> How to stir-fry squid

1. Cut the cuttlefish trunk from the edge, remove the bones, internal organs and ink sac, peel off the skin, and clean inside and outside;

2. Remove the eyes and mouth from the arms and legs, peel off the skin, and clean the suckers and other parts of the body;

3. First, cut the cuttlefish trunk into 5cm wide slices longitudinally and place them horizontally on the chopping board with the inside facing up;

4. Keep the knife and the cuttlefish at a 45° angle, and slice the cuttlefish diagonally to create parallel cuts about 3 mm apart (cut to about 2/3 of the way, do not cut through);

5. Cut the slices vertically with parallel cuts about 3 mm apart, and cut every 6 to 7 times to make a 5 cm long and 2 cm wide wheat ear cut piece.

6. Cut the tentacles into segments about 4 cm long;

7. Remove the leaves from the celery and cut it diagonally into small pieces about 3 cm long; peel the carrots and cut them into diamond-shaped slices;

8. Blanch the celery and carrots in water, remove and drain for later use;

9. Wash the green onions and cut them diagonally into 2cm long pieces; peel the garlic and cut them into slices; remove the stems of the small red peppers and cut them diagonally into 1cm long pieces; add 50mL of water to the potato starch and mix well;

10. Heat the wok with salad oil until 50% hot, add the scallions and garlic slices and sauté until fragrant;

11. Add the small red pepper and stir-fry for about 10 seconds;

12. Add the chopped cuttlefish and stir-fry until it curls up slightly;

13. Add the blanched celery and carrots;

14. Pour in rice wine and stir-fry for about 30 seconds, then add salt and sugar to taste;

15. Pour in water starch to thicken, then add chicken stock;

16. Finally, pour in white vinegar and serve;

17. Add to plate and let’s eat!
