Cumin beef short ribs recipe

1.1 Add 3 tsp cumin powder, 1/2 tsp black pepper powder, 2 tsp soy sauce, 1/3 tsp salt, 1/2 tsp sugar, 1 tsp brandy, 1/2 tsp meat tenderizer or baking soda, marinate with hands until it feels very sticky, then add 1 tbsp water, mix until the water is completely absorbed, add 1 tsp salad oil, continue to mix well, and let it stand for at least 2 hours or more;

2.2 Cut the short ribs into pieces between the two bones;

3.1 Fry the beef short ribs on both sides until 80% done or just cooked;

4.2 Heat the oil in a pan until it is 40% to 50% hot, then add the beef ribs.

5. Flatten the small potatoes with a hammer or knife;

6. Prepare the batter with a ratio of 1:2 low-gluten flour: corn starch. Do not add too much water. Add until the batter is thick enough to hang on the surface of the potatoes. Put the small potatoes into the batter and roll them all over.

7. Fry the broccoli in the oil that was used to fry the beef ribs. The oil should not be too hot, about 50% hot. Place the broccoli next to the beef ribs after frying. Pour the oil into another bowl, which can be used for stir-frying. Put appropriate amount of water and 1 teaspoon of salt in the pan, blanch the small florets of broccoli, and place them on a plate.
