5. Starchy potatoes will become mushy once cooked, and it is difficult to keep them intact even if they are cooked with the skin on. If you are using it for cold salad or making diced potatoes, you can add some pickling brine or vinegar to the water in which the potatoes are boiled, and the potatoes will remain intact after cooking.
