4. Place in a basin of water and rinse

5. When the temperature of the fish is cool, peel off the skin, then turn the fish over, with its back facing down, and cut it open between the upper and lower limbs with a knife to take out the debris inside and throw it away. Wash the fish.

6. Drain the water from the fish and put it in a bowl. Add a little Huadiao wine and soy sauce and stir evenly.

7. Heat the oil in the pan until the oil temperature reaches about 120°

8. When the oil temperature reaches 120°, add the fish and fry until it is light golden and the skin is a little dry, remove it and drain the oil

9. Heat the pan dry, add a little oil, then when the oil temperature rises, add ginger slices and stir-fry until fragrant, add appropriate amount of Huadiao wine, then add water

10. When the water boils, add dark soy sauce, light soy sauce, salt, sugar, chicken powder, ginger slices, star anise, etc.

11. Put the fish into the prepared water and when it boils, pour it into a large bowl and put it in the microwave for about 10 minutes, or steam it in a steamer for about 30 minutes.

12. While catching the water fish, you can cut the cucumber into slices, cut the red and green cherries into half and place them on the side of the plate, place the water fish in the middle of the plate, then put the soup in the large bowl into the pot, then add the water starch when the soup boils, and then add a little cooking oil, which is the tail oil.
