1. Wash the duck and cut it into pieces. Cut the white radish into pieces the length of your ring finger. If the pickled radish is too salty, wash it with warm water and set aside.

2. Add water to the soup pot, put in the duck, scallion segments, 2 slices of ginger, and cooking wine, until the water level covers the duck meat. Bring the water to a boil over high heat. When foam appears on the surface, remove the duck meat and rinse it repeatedly with clean water.

3. Put the blanched duck meat into the casserole, add water again, the water level should be about 4 cm above the duck meat, and boil the soup over high heat.

4. Then add the remaining ginger slices and pickled radish, cover and simmer over low heat for about 40 minutes until the duck meat is tender.

5. Finally, add the white radish and sugar, and continue to cook until the radish is cooked through. Add white pepper and salt according to your taste before eating.
