Braised noodles are different from the ordinary noodles we know in our daily lives. Ordinary noodles can be cooked directly with boiling water, but braised noodles require you to start with flour and cut noodles (you can also buy them, but it is recommended to make them yourself). Although there is an additional process of making noodles yourself, the overall difficulty is probably not much different from ordinary noodles. Noodles: Knead the noodles in advance (1 hour is best), which is faster than cooking noodles.

It just needs to be slightly harder. (Or buy a machine and get the thin one).

Green beans: Wash and break into small pieces about 1 inch long (for a family of three, about 2 pounds will be enough).

Pork: cut into small thin slices (the amount and fatness depends on personal preference. If it is lean, use a little more oil when frying).

Shredded green onion, sliced ​​ginger, and aniseed.

Half a small bowl of boiling water (or cold boiled water or purified water) + 1 teaspoon of vinegar (more or less depending on personal preference) + a little sesame oil + mashed garlic + the broth used after stir-frying beans and meat (optional depending on preference).

Production steps

Heat a slightly deeper iron pan (hot pan and cold oil), put in some spices, wait until the oil is hot, add the meat, stir-fry until it changes color, add soy sauce and salt, and when the aroma comes out (about half a minute), add chopped green onions and ginger slices, stir-fry for about half a minute, then add the beans and stir-fry for about 1 or 2 minutes. Pour in about a bowl of water and turn down the heat

Roll the dough into a large sheet about 1 or 2 mm thick. Spread out the dough, sprinkle more dry flour on the large sheet, and roll up the large sheet with a rolling pin. Use a knife to cut the dough along the length of the rolling pin to form a sheet about 10 cm wide (the diameter of the rolling pin). Then cut it into short and thin noodles.

At this time, look at the pot where the vegetables have been fried, and change to medium heat to ensure that there is enough steam (if there is too much water, pour out some of it first, and the water left in the pot should just cover the beans). Sprinkle half of the noodles evenly on the vegetables, cover and simmer for 2-3 minutes. Shake the noodles with chopsticks to prevent them from sticking, then add the remaining noodles and simmer for another 2-3 minutes. Finally, pour the prepared half bowl of water (shown in Preparation 5) on the noodles, cover and simmer for 1-2 minutes. (If there is more water, simmer for a while longer. It is best if there is only 1cm of water in the pot before turning off the heat.) Turn off the heat. Cover and simmer for 1 or 2 minutes. Lift the lid, mix well and you can eat.
