How to make Fragrant Shredded Chicken

There are actually many things to pay attention to when it comes to making a good dish. Of course, cooking is not as difficult as everyone imagines. Everything is difficult at the beginning. First prepare the ingredients and seasonings, and then start making the fragrant hand-shredded chicken.

1. Kill half a native rooster.

2. Prepare the necessary ingredients and mix the chili powder, pepper powder, five-spice powder and fifteen-spice powder into a small bowl.

3. Wash the chicken, put it into a pot of boiling water and add a little cooking wine to blanch it to remove the fishy smell.

4. Take out the blanched chicken and rinse it with clean water to remove the floating foam. Add appropriate amount of clean water to the pot, put in the chicken and ginger slices, cover and cook until cooked through, then turn off the heat. (Time is about 10 minutes after SAIC)

5. Leave the cooked chicken in the soup for 20 minutes without taking it out. Use this time to prepare the dressing.

6. Heat a wok, add a little corn oil, then add the seeded dried red chili and fry until crispy and fragrant.

7. Crush the fried dry red chili peppers.

8. Put all the ginger, garlic and chopped green onions into the bowl of chili powder that has been mixed in advance.

9. Heat the wok, add appropriate amount of corn oil and heat until 70% hot, then turn off the heat.

10. While hot, add the oil into the bowl with the mixed chili powder and mix well.

11. Take another bowl, add light soy sauce, seasoning salt, chicken essence, a little sesame oil, a little sugar, and then add appropriate amount of chicken soup to make a sauce.

12. Pour all the mixed chili oil into the sauce bowl.

13. Mix well to make red oil sauce.

14. Take out the chicken, put on disposable gloves, tear the chicken into strips about 5cm long and of appropriate size, and place them in a bowl.

15. Pour all the red oil sauce into the noodle and sprinkle with the chopped dried chili pepper, chopped green onion and coriander.
