5. Wrap the duck in plastic wrap and put it in the freezer. After 12-24 hours, you can take it out and thaw it.

6. After the duck has been thawed, remove the plastic wrap and wash off the salt and pepper on the duck with clean water.

7. Wash the shallots and ginger, stuff them into the duck's stomach, wipe the duck's skin dry with kitchen paper, and then brush it with a layer of cooking wine.

8. Bring a pot of water to a boil, put the duck into the steamer, cook over medium-high heat for 30 minutes, remove from the heat, cut into pieces and place on a plate, pour the original sauce on the plate when the duck was steamed (the steaming time can be adjusted according to the size of the duck)
